New Yorks with Truffle Butter and Texas Toast

When Erick and I moved to Milwaukee and lived on the East side, we used to walk to a local restaurant that served Steaks with Truffle butter, there were many nights when he and I walked through that neighborhood on a pilgrimage for a steak we could only dream of making ourselves.  Oddly (?) enough, now Steaks with Truffle Butter and Texas Toast is my most requested meal.  It seems to be the thing cravings were made of.  I never really considered writing how to cook steaks, especially because recipes and techniques abound the universe.  The real deal for me is to keep it simple.  I don't even marinate it, nope, I like the meaty flavor and why do anything to take away from that?  Right before serving, the big key is adding a dab of truffle butter on top of the sizzling steaks. 

When it comes to steak here are a few tidbits regarding my routine
  • Chimney Starter with Newspaper, no lighter fluid EVER
  • Charcoal, I like Kingsford
  • Once Coals are ready allow Grill to "pre-heat" with lid on for 15-20 minutes
  • Once Coals are ready, I quickly cook off the Texas toast and prepare to put on the steaks
  • Truffle Butter

Ingredients: 
  • Garlic Salt
  • Fresh Ground Pepper
  • 2 beautiful NY Steaks
Directions:
  • Season Steaks with Garlic Salt and Pepper
  • While grill heats allow steaks to come to room temp
  • Grill for four minutes each side for Medium Rare, if your grill is really hot, go 3-3 1/2 minutes per side. 
  • Remove from grill and dollop with truffle butter
Grilled Garlic Texas Toast

I am always looking for a reason to eat or make some form of Texas Toast.  Texas Toast is one of those things that most people rarely run into.  When you I run into it you say to yourself, "jeepers, why don't I have this more often."  Then you I say, I am going to make some for myself sometime.  Ever since I found it in the grocery store, I rarely don't have it on hand (freezer).  It is sick, I know, insert evil laugh.  Try it, you'll like it.


Ingredients:
Directions:
  • Slather both sides of Texas Toast with sweet cream butter
  • Sprinkle both side of Texas Toast with Garlic salt.
  • Cook on charcoal grill about 1 minute per side, depending on how hot your grill is
  • It goes quickly so once you put the Texas Toast on the grill, cover it to prevent flair ups and count to 45 and lift the lid, check to see if it is ready to be flipped.
  • Once toasted, flip and grill another 46-60 seconds
  • Remove from grill and cover with foil, keep warm in warm oven
  • Use me to sop up the meaty, juicy truffle butter flavor from the steak and hum with delight.
